BUFFALO, NY (CW23) - Buffalo Mac & Cheese
Ingredients:
Pasta of your choice
1 small onion
½ cup shredded carrots
1 celery stalk
2 Tbsp. butter
2 Tbsp. flour
¼ cup dry white wine
2 cups milk
1 tbsp parsley
½ tsp dry mustard
1 tsp salt
½ tsp pepper
2 cups havarti cheese - creamy
½ cups gorgonzola or crumbly blue cheese
¼ cups cayenne pepper sauce
2 cups cooked shredded chicken
Directions:
Cook ¾ lb. your favorite shape pasta and set aside.
Sautée onion carrots celery and butter on medium heat.
Add flour and stir to make a paste.
Slowly add white wine and milk while stirring.
Cook and stir on medium heat until thick and bubbly
Add parsely, dry mustard, salt, pepper, cheeses, hot sauce and chicken.
Combine cooked pasta and cheesy sauce in a 2 qt. casserole dish and bake covered at 350 degrees for 25 minutes.
The Wing King's Chicken Wings
Ingredients:
Chicken Wings
Frying Oil
2 T. Butter
1 large shallot
2 garlic cloves
2 oz. Dark Beer
1 cup Chili Sauce
1 cup BBQ Sauce
1 ½ t. Ancho Pepper
1/2 cup Brown Sugar
½ cup Honey
4 oz. Cayenne Pepper Sauce
Directions:
Chop shallot and cloves and sautée in butter.
Add Dark Beer, Chili Sauce, BBQ Sauce, pepper, brown sugar, honey and cayenne pepper sauce. Stir.
As you create the sauce, drop 50 chicken wings (the amount you drop in at one time will depend on the size of your fryer) in your table top deep fryer.
Once wings are fully cooked, sauce the wings in a large mixing bowl. To plate the wings: garnish the plate with celery and carrots and serve with a side of blue cheese dressing.
