Spicy summer soup with Scottie

BUFFALO, NY (CW23) - Chef Scottie's Gazpacho

Ingredients:

4lg. Peeled tomatoes
3 peeled & seeded chopped cukes
1 lg. Green pepper
10 green onions
2 cloves & mashed garlic
Salt to taste
¼ cup red wine vinegar
¼ cup olive oil
3cups tomato juice
1 ½ cup beef broth
Hot sauce to taste
Worcestershire to taste

Directions:

1. Small chop all vegetables the same size.
2. In large bowl add vegetables,
3. Tomato juice, beef broth, olive oil, red wine vinegar, and salt, hot sauce,
4. Worcestershire to taste.
5. Mix well and chill over night.

Gazpacho Salad Dressing

Ingredients:

2cups gazpacho
½ cup sugar
½ cup red wine
3cups 10% salad oil
½ cup lemon juice
salt and pepper to taste

Directions:

Combine ingredients in a blender and add oil until desired consistency is achieved.
