Savory Salmon and Potatoes

BUFFALO, NY (CW23) - Pan Seared Salmon with Mashed Potatoes and Dilled Cucumbers

Ingredients:

4 6oz salmon filets
1 c soy Sauce
4 Idaho Potatoes
1 med. size spanish onion
¾ c milk
2 Tbsp butter,
salt, and Pepper to taste
2 english cucumbers
¼ c fresh dill
1 c sour cream
1/8 c cider vinegar

Directions:

Peel and place potatoes in a pot of cold water with salt. Bring to a boil and let simmer until tender.
Dice one white onion and add to milk with butter in a saucepan.
Bring to boil.
Drain potatoes, return to pot, add the milk mixture and mash. Keep warm.

Using a mandoline with teeth, julienne the cucumbers. Place in bowl with fresh chopped dill and salt.
Marinate for 15 minutes.
Add sour cream and vinegar to drained cucumbers.

Place serving size pieces of salmon in a dish with soy sauce. Marinate each side for 5 min. Pat dry with paper towels.
Heat sauté pan on medium/high heat. Spray with Pam. Sear salmon on high heat for 1.5 minutes on each side
Layer seared salmon on top of the mashed potatoes, with cucumbers on top of the Salmon.
 

Second Helpings

Salmon Croquette with Cucumber Dill Sauce

Combine in a bowl leftover mashed potatoes with butter, flour, and egg yolk.
Place a piece of the leftover salmon in the center and form a cake.
Roll the cake in a combination of flour, egg and panko crumbs.
Fry it up in a pan.
Puree or chop the leftover cucumbers to make the sauce.
