BUFFALO, NY (CW23) - Blackened Salmon with BBQ Shrimp and Crab Meat Green Onion Grits
Salmon:
2 - 6oz Piece Salmon
1 tbsp Blackening Spice
1 tbsp Butter
Directions:
Heat cast iron skillet until hot and add butter
Season fish on both sides
Cook 1 ½ minutes on each side
Put aside and keep warm
BBQ Shrimp:
12 - 16/20 Shrimp pealed & deveined
2 tbsp butter
1 tsp chopped Garlic & shallots
1 tsp blackened spice
2 tbsp olive oil
Directions:
Heat cast iron skillet back up
Add butter & garlic and cook for 2 minutes
Add shrimp, spice & oil and cook until shrimp are pink and cooked through
Grits:
4 Cups Milk
1 tbsp Butter
4oz Crab
1 tsp Salt
Pinch of pepper
2 Cup Grits
Directions:
Heat milk, butter, crab & seasoning to a simmer
Whisk in grits and cook for 20 minutes
Add green onion.
On a warm plate, spoon on grits, then lay out Salmon and top with BBQ shrimp
