Pork Chops in Strawberry Sauce

BUFFALO, NY (CW23) - Pork Chops & Strawberry Sauce with Pickled Cherries

Ingredients:

bone-in pork chops
1/2 cup red wine vinegar
1/2 cup water
1/2 cup sugar
1/3 cup balsamic vinegar
1/3 cup honey
2-3 tbs dijon mustard
1 shallot
grapeseed oil
1 pint strawberries
cherries

Directions:

To pickle cherries, combine red wine vinegar and water in a small saucepan.
Heat and dissolve sugar.
Pour over cherries and let sit in the fridge for at lease 24 hours.

Season pork chop with salt and pepper.
Sear the pork chop in a pan to desired temperature.
Combine balsamic vinegar, strawberries, dijon mustard and shallot in blender.
Slowly add grapeseed oil until desired consistency is achieved.
Top finished pork chop with sauce and serve, adding goat cheese if desired.
