Chef Scottie from Riley Street Station Shows Us How to Make a Pesto Linguine
Ingredients:
3 cups fresh basil
2 tbsp chopped garlic
1/2 cup Parmigiano-Reggiano
Linguine
1/2 cup Pine Nuts
Salt & Pepper to taste
1 qt. Olive Oil
Good Quality White Wine
Steps:
1. Clean Basil
2. Add 1 cup Olive Oil to Blender
3. Add salt and pepper
4. Add garlic
5. Add basil
6. With blender on, add rest of olive oil
7. Add Pine nuts
8. Add parmigiano-reggiano
9. Toss Pesto with hot linguine
10. Garnish with shaved parmesan
Second Helpings: Caprese Salad
Ingredients:
5 oz fresh mozzarella
1 large plum tomato
Pesto topping
5 slices baguette
2 cup fresh mixed greens
Salt & pepper to taste
Steps:
Place ingredients neatly stacked on plate and top with pesto
