Chef David Makes a Coffee Bourbon Pecan Pie

Chef David from the Buster Brown Bean Company makes a Coffee Bourbon Pecan Pie

Ingredients:

1 pre-made pie dough, chilled
3/4 C pecan Halves
1/4 C finely chopped Pecans
1/2 C maple Syrup
1/2 C dark corn syrup
3 TBSP brown sugar
2 TBSP butter - melted
2 TBSP bourbon
2 tsp instant espresso OR instant coffee granules
1 tsp vanilla extract
1/4 tsp kosher salt
2 extra large eggs lightly beaten
2 (extra large) egg whites, lightly beaten

Steps:

1. Preheat the oven to 350 degrees fahrenheit
2. Roll out pre-made pie dough and place into 9 " pie dish. Crimp edges as desired. Place in fridge to chill.
3. Chop up pecans
4. Lightly whisk the eggs and egg whites.
5. Combine ALL ingredients in a bowl and whisk together, mixing thoroughly. Add to the pie shell.
6. Bake at 350 for 38-45 minutes OR until the center has some mild "jiggle" left to it. Watch the crust...if it begins to over-brown, wrap in foil. Remove from oven and allow to cool and set.

Hot Totty ingredients:

1 bag Vanilla Hazelnut Tea
Hot water
Shot Bourbon
Dash of Cream

Steps:

1. Combine all ingredients for a tasty treat

Irish Cream Coffee Ingredients:

1 Cup Buster Brown Bean Co Holiday Blend Coffee
Shot of Bourbon
Dash Of Cream
Whip Cream

Steps:

1. Combine coffee, bourbon and cream, top with whipped cream.

Second Helpings: Pumpkin Pancakes

Ingredients:

Pecan Syrup
1C Maple Syrup from DeGolier Maple Farms
5 Tablespoons pecans, toasted & chopped.

Pancakes:

1C Buttermilk Pancake Mix
1C cold water
1/3C canned canned pumpkin
1tsp pumpkin pie spice
Butter/non-stick spray

Steps:

1. For the Pecan Syrup: Lightly toast chopped pecans in a small saucepan on low heat. Add DeGolier's Maple Syrup and keep heat at low until warm.
2. For the pancakes: In a medium bowl, whisk pancake mix, water, pumpkin, and pumpkin pie spice until just blended (do not over mix; mixture should be lumpy).
3. Spray heated griddle/pan with nonstick or coat with butter. Reduce heat to medium. Pour batter onto griddle to form pancakes.
4. Cook until bubbles appear and then turn over and cook about 2-minutes linger.
5. Transfer pancakes to plate. Top with butter and serve warm with pecan syrup.
