Chef Tom's lobster bisque

BUFFALO, NY (CW23) - Lobster bisque

Ingredients:

Onion
Celery
Carrot
Garlic
Shallot
Lobster stock
Heavy cream
Corn starch
Brandy
Tomato paste
White pepper
Cayenne pepper
Nutmeg
Salt / pepper
Worst. Sauce

Steps:

Sautee vegetables in butter over medium heat 10-15min.
Add hot sauce, worcetershire sauce, nutmeg, salt and pepper, tarragon, brandy, tomato paste, heavy cream, lobster meat and lobster stock.
Bring to a boil then sift in corn starch.
Let soup thicken and serve.
