BUFFALO, NY (CW23) - Lamb Avgolemono
Ingredients:
2lbs lamb (shoulder, shank or chops)
oil
salt & pepper
onion
garlic
potato
oregano
carrot
dill
white wine
beef or chicken stock
4 egg yolks
1/4 cup lemon juice
cayenne
Directions:
Brown lamb.
Deglaze pan with white wine.
Add vegetables, spices and stock.
Return lamb to a simmer.
Add avgolemono sauce (directions below).
Heat and serve.
Avgolemono Sauce:
beat egg yolks until foamy, 2-3 minutes by hand.
Slowly add lemon juice while continuing to beat eggs.
Slowly add 1/4 cup stock and cayenne
Heat gently without boiling.
