Carnitas from Chef Chris

BUFFALO, NY (CW23) - Carnitas

Ingredients:

8-10lb boneless pork shoulder or pork butt
salt and pepper
spices
garlic
black bean salsa
cheddar cheese
sour cream
pickled red onion

Directions:

Season pork with salt and pepper and your favorite spices.
Stud with garlic cloves and roast covered in tinfoil in a 250 degree oven for 10 hours until meat shreds apart.
Serve in toasted corn tortillas with black bean salsa, cheddar cheese, sour cream and pickled red onion (or condiments of your choice)

Second Helpings:

Spicy queso for carnitas nachos:

2T Butter
2T flour
2c whole milk or heavy cream
½ c cheddar
½ c pepperjack cheese
1T sriracha sauce

Directions:

Melt butter in med sauce pot and add flour, cook for 2 mins and whisk in milk.
Simmer for 2 mins and whisk in cheeses and hot sauce
Serve over nachos with leftover carnitas
