Beef Brisket with a kick

BUFFALO, NY (CW23) - BBQ’D Beef Brisket Sandwich

Ingredients:

One 6-8lb raw beef brisket
1 ½ c of your favorite bbq rub
1 can of cola
2c water

Directions:

Rub brisket with the bbq rub, place in roasting pan and cover with soda and water.
Cover with saran wrap and tinfoil and place in oven at 225 degrees for 6-8 hours til tender
Slice against the grain and serve with your favorite bbq sauce, horseradish coleslaw and cheddar cheese on a hardroll

Horseradish coleslaw

Ingredients:

1 head green cabbage sliced thin
1 carrot minced or shredded
2c coleslaw dressing
1/4c horseradish

Directions:

Combine all in ingredients in a mixing bowl and serve with brisket

Second Helpings

BBQ brisket hash:

Chop up 2c leftover brisket and sauté in 3T butter
And add
2c cooked diced potatoes
½ c chopped onion
1/2c chopped bell pepper
1 jalapeno minced
Season with salt, pepper and garlic powder
Serve with poached eggs
