Bananas galore for Mardi Gras!

BUFFALO, NY (CW23) - Chocolate Banana Cupcakes with Caramel-Rum Buttercream Frosting

Ingredients:

¾ cup cooled coffee
½ cup canola oil
1 tsp vanilla
2 eggs
¾ cup cocoa powder
1 tsp salt
1 ½ tsp baking powder
2 cups cake flour
½ cup milk
1 ripe banana, peeled and mashed

Steps:

Preheat oven to 350.
Sift flour, baking powder and salt together- set aside
Mix coffee, oil, vanilla and eggs until blended
Add sugar and cocoa powder and mix until blended.
Add flour mixture and milk in alternating batches beginning and ending with the flour.
Add banana and blend on low speed until just combined
Scoop into lined muffin pans, filling approx. 2/3 full
Bake for 18-20 minutes, rotating halfway through.

Caramel- Rum Buttercream Frosting

Ingredients:

4 sticks unsalted butter (room temp)
2 cups powdered sugar
1tsp vanilla
3 tbsp caramel
1 -2 tbsp rum

Steps:

Beat butter on high speed until light and fluffy (3-5 mins)
Add powdered sugar one cup at a time and mix until blended
Add vanilla and caramel and blend
Add rum and whip on high speed until light and fluffy (approx. 1 minute)
Fill piping bag and pipe onto cooled cupcakes, drizzle with additional caramel.

Bananas Foster

Ingredients:

1/2 stick butter
1 cup brown sugar
1/2 tsp cinnamon
4 bananas, peeled, sliced once lengthwise and then in half
1/4 cup dark rum
Vanilla ice cream for serving

Steps:

Melt butter, brown sugar and cinnamon in large pan over medium low heat until sugar begins to dissolve
Add bananas and cook until they begin to soften & caramelize.
Remove pan from heat, add rum
Using a long handled lighter or kitchen torch give a flame to the pan.
Allow alcohol to burn off and place bananas over the ice cream and drizzle with additional warm sauce.
