Assorted Bruschetta with Chef Chris

BUFFALO, NY (CW23) - Garlic Bruschetta with Assorted Toppings

Ingredients:

1 loaf of ciabatta bread
1 bulb of fresh garlic
I bottle of good extra virgin olive oil for drizzling
Salt and pepper to taste

Directions:

Preheat your outdoor grill or grill pan to med high
Slice bread on bias and drizzle with the extra virgin olive oil (be careful not to over drizzle on outdoor grill due to the chance of flare up)
Season with salt and pepper and toast until deep golden brown with grill marks
Rub immediately with garlic cloves and top with your favorite toppings

Hummus

Ingredients:

1 can of drained garbanzo beans
2 cloves of garlic
2T tahini paste
Juice of 1 lemon
3T olive oil
2t cumin and salt and pepper to taste

Directions:

Puree ingredients in a food processor.
If mixture gets too think, add water as needed.

Other great toppings:
Olive salad, Tomatoes and basil, Marinated artichokes, Basil pesto, Roasted garlic and white beans

Caprese Panzanella

Directions:

Take leftover bread and tear into bite size chunks, toss with chopped tomatoes, fresh mozzarella, Basil, Extra virgin olive oil and balsamic vinegar.
Serve over arugula or baby spinach
