An intricate and enticing Beef Wellington

BUFFALO, NY (CW23) - Beef Wellington

Ingredients:

1lb beef tenderloin,
olive oil as needed,
4oz. portabella mushrooms,
2oz. butter,
1 large sprig fresh thyme,
10 slices prosciutto,
1 large sheet puff pastry,
flour for dusting,
2eggs,
salt, pepper,
1tbsp chopped garlic

Directions:

Brown beef in olive oil, all sides. set aside and cool for 20 minutes.
While the beef is cooling, cook mushrooms in olive oil and butter until tender, and white wine, salt, pepper and garlic and reduce until wine is gone.
Place film wrap down on table and put prosciutto on top of wrap, overlapping each piece. place mushroom mixture on top of ham. set the beef on top of the mushroom mixture and the rest of the mushroom mixture on top. use the wrap to roll and tighten around the beef, chill for 20 minutes.
Roll out the pastry, sit the beef in the center of the pastry. egg wash the sides of the pastry and wrap close. bake at 325* for 20- 30 minutes, allow to set for 10 minutes. set on top of pepper sauce, garish with green onions.


Second Helpings

Chicken Empanadas

Ingredients:

Chopped cooked chicken,
Colby jack cheese,
roasted red pepper,
jalapeno,
onion chopped,
salt,
pepper and one sheet puff paste.

Directions:

Roll out puff pastry, cut into 8 portions, fill and pinch close, baked until golden brown . garnish with sour cream.
