A sandwich topping that's just dandy!

BUFFALO, N.Y. (CW-23) - A ngelo Turco from Louie's Hot Dogs prepares their famous dandelion greens sandwich topping

Ingredients:

2 lbs fresh dandelion greens

I tablespoon fresh minced garlic

3 cups of chicken stock .

I cup of freshly grated Romano cheese

Teaspoon of salt

Teaspoon of black pepper

 

Cooking procedure :

1. Wash dandelion greens thoroughly in cold water

2. Add washed dandelion greens to boiling water

3. Add remaining ingredients to boiling dandelion greens, except Romano cheese

4. Stir gently for  5-6 minutes then reduce to low . Simmer on low for 1-2 minutes, then reduce heat

Provides topping for 10-12 sandwiches

 

Second helpings: Dandelion omelette

Scramble eggs in a large sauté pan, and mix in with dandelion greens, minced garlic and fontina cheese
